Ingredients:
5-6 cups sliced summer peaches
1 tsp freshly grated lemon zest
1/8 teaspoon cinnamon
1 cup water
1 cup sugar

Batter:
1 stick (1/2 cup) butter
1 cup sugar
1 1/2 cups self-rising flour
1 1/2 cups milk

Directions:
Preheat oven to 350 degrees. Prepare ripe peaches by peeling off the skin with a paring knife then slicing peaches in half to remove the pits. Over a mixing bowl slice the peaches lengthwise to reserve any juice. Take a deep pan and add one cup of water and one cup of sugar, simmer over medium heat until sugar is dissolved. Place the peaches into the hot liquid and bring back to simmer, cook for 2 minutes. Set aside and reserve.
Using a Dutch Oven style pot, place on low heat and melt one stick of real butter in the bottom (no butter substitute) then turn off heat . Make the batter by adding the self-rising flour, sugar and milk in a large mixing bowl. Using a wire whip, whisk together until smooth. Pour the batter into and evenly over the melted butter (do not mix).
Next, ladle all the peaches along with the juice over the batter evenly,  floating the peaches on top of the batter (do not mix the peaches into the batter).  Place the cobbler into the preheated oven and bake for 40-50 minutes until golden brown. Let cool and Enjoy!
